Easy Elk Meatloaf

With creamy cheddar cheese and a savoury sweet glaze, this meatloaf is moist and flavourful.

Equipment

  • 1 mixing bowl
  • 1 9x5 loaf pan

Ingredients
  

  • 1 lb ground elk
  • 2 eggs
  • ¼ cup rolled oats
  • ½ cup grated carrot
  • 1 cup shredded cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 Tbsp onion flakes

Glaze

  • ¼ cup brown sugar
  • ¼ cup ketchup
  • 1 Tbsp prepared yellow mustard

Instructions
 

  • In a small bowl, beat eggs.
  • In a large bowl, combine ground elk, oatmeal, salt, pepper, onion flakes, grated carrots, and beaten eggs. Mix with your hands to combine.
  • Add shredded cheese to meat mixture and combine.
  • Press meatloaf into a greased 9x5 loaf pan.
  • To make the glaze, add brown sugar, ketchup, and mustard in a small bowl and stir to combine.
  • Spread glaze evenly on top of meatloaf.
  • Bake uncovered for 1 hr.
  • Pour off any excess liquid at this time.
    Return to oven for 15 minutes or until internal temperature reaches 160 degrees F
  • Cool slightly and spoon portions from bakeware.
